Eliza Acton, daughter of an Ipswich brewer, who wrote the first domestic cookbook titled "Modern Cookery for Private Families".

Published in 1845, in it was the first mention of a recipe for Christmas Pudding

The book was the result of many years of research and practice and many of her recipes are still considered to be the best.

As a toast to Eliza and her brewing father we have used the fruity English hops Cascade and Endeavour together with the addition of dried orange peel to give a festive flavour.
